Zero Carb Egg Tarts à la Clare

These lovely little egg tarts are a nice change when you fancy a break from juicy steaks or beef mince. Clare is a very creative cook and shares some lovely Zero Carb recipes with our group over at Zero Carb UK.


Ingredients:

Tin of tuna
Ham
6 eggs
Grated cheese (optional)

12 silicone cup cake cases

In six cases I put tuna
In the other six I put ham

Whisk the egg and season

Pour the mixture over the filling…
Sprinkle with grated cheese

Bake for about 20 minutes or until they look cooked!!

You can use a silicone muffin tray for the best results.

The Ham ones rose up like Yorkshire puddings. The tuna ones stayed quite flat but very moist.

These would make a great breakfast option and could be made the day before if you wanted to grab breakfast on the go. These would also make great additions to your children’s packed lunch boxes for school, or to pack up and take with you to work for lunch.
